Quick, easy Ebelskivers (danish pancakes)

Danish Ebelskivers Basic Batter

Happy New Years everyone! In order to bring the new year in right my mom pulled out her brand new ebelskiver pan and made some delicious Ebelskivers for breakfast. Ebelskivers are delicious sphere shaped pancakes that are very light and fluffy and have a similar taste to German pancakes. They get their lightness due to the whipped egg whites being folded  into the batter, which is made primarily with flour and buttermilk. These are great treats with endless possibilities. You can put any stuffing in them as well as top them with anything you want. The only thing wrong with them is that they are so easy to pop in your mouth your going to eat them up too quick!








Danish Ebelskivers Basic Batter

Prep Time: 20 minutes
cooking time: 24 minutes
Makes: 21 Ebelskivers


Ingredients: 
3 Large eggs, separated (keep both whites and yolks)
2 tablespoons sugar
1/2 teaspoon salt
2 cups (250g) unbleached all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 cups (480 ml) buttermilk, shaken
2 tablespoons (30g) butter, melted

Tools:
Ebelskiver Pan
Hand mixer
Whisk
Rubber Spatula
Mixing bowls

Steps:

1. Whisk the egg yolks with sugar and salt



















2. In a separate bowl, whisk together the flour, baking powder and baking soda.
























3. Add dry ingredients to the yolk mixture after alternating with the butter milk.









4. In a separate bowl, beat egg whites until stiff peaks form. Gently fold egg whites into batter with a rubber spatula.







5. Heat ebelskiver pan over medium heat until hot. Pan is ready when a small amount of water sizzles when sprinkled over the pan.




















6. Brush pan with a little butter and heat until it begins to bubble. Fill each cup 2/3 of the way full of batter.




7. after 3 to 5 minutes, turn ebelskivers using wooden chopsticks or skewers and cook for another 2 to 3 minutes until browned on all sides. repeat using all the batter.
